Casino Royale Vesper Martini



   As everyone is talking about the 007  recently because ot the new James Bond Sky Fall movie playing in Japan now we are having a slitly increasing in Martini orders .

   That's a wonderfull chance to try the Vesper martini wich still an almost forgotten cocktail among the japanese .

   This variation on the Dry Martini is said to have been created by Gilberto Preti at Duke's Hotel , London , for the author Ian Fleming ( first James Bond novel , Casino Royale , published in 1951 )

  In the novel , Bond explains to a Casino bartender exactly how to make and serve the drink , " In a deep champagne goblet . Three measures of Gordon's gin , one of vodka , half a measure of Kina Lillet . Shake well until it's ice-cold , then add a large slice of lemon peel ."

  Well , We are in Japan , small martini glasses would suits better than a champagne goblet . For the Kina Lillet wich doesn't exist anymore since 1986 , instead it became Lillet Blanc with a different recipe ,  after the company was bought by the french Boire family . We replaced it with Kina L'avion D'or by Tempus Fugit spirits . For the vodka instead of a Russian or Polish vodka we choosed the french Grey Goose . And to finish off our interpretation , for the gin we choosed , instead of gondon , the Berry Bro's n 3 gin wich has a strong coriander and cardamon presence .


  


    Vesper Martini


     3 parts of n3 gin

     1 part of Grey goose vodka

     1/2 part of Kina L'avion D'or


     Mix all ingredients in a mixing glass until it gets cold , pour in a martini glass . Add a large lemon peel .

     For smaller martini glasses , all the measures are done by half .



      The Vesper martini , in the novel , was named after the  agent Vesper Lynd , wich at the end , she turns out to be a double agent . James Bond last words in the book were " The bitch is dead now " and he never ordered a Vesper martini since then .

    ps : since all 007 James Bond movies all umbelievable things were possible , the "Not stir , shaken please " would be one of the impossible things . Sorry James , We Stir .

SPEAKEASY COCKTAIL - An twist on the Sazerac




   If Sazerac is your favorite drink and if you want to try something in the same line , this is "THE COCKTAIL":   SPEAKEASY .

   This recipe is a twist on Sazerac  adapted by the italian bartender Oscar Quagliarini from the Juleps New York bar in Milan . The cocktail Speakyeasy was soo good that I decided to make as well with some arrengements since we didn't have the bitters from the original recipe . Instead we used Bob's bitters . The result was awesome .

  It is surprising how Ardbeg macthes well with all the ohters ingredients . We have the right amount of smokiness , the after taste is quite aromatic with the presence of chocolat , absinthe and the sweetness of Vanila .


SPEAKEASY

first rinse an old fashioned glass with absinthe ( we used Artemisia Capricieuse 72) , then pour it out .

1 sugar cube
4 drops of Chocolate Bob's bitters
4 drops of angostura

- in a mixinglass with the sugar cube and bitters , crush all ingredients . Add one spoon of  soda to dissolve better the sugar . Add some clear ice in the mixing glass .

40ml Ardbeg 10 years
1/2 bar spoon - Galliano

- ad the ingredients in the mixing glass and stir well .
- pour into the absinthe-rinsed old fashioned glass with ice .

garnish : flamed orange peel .

And then get ready to drink one atfer another .

Nashi Hendricks Martini ( Japanese Pear Martini )



    Just a couple of weeks before the " Nashi  " season comes to an end ,we would like to introduce a nice fruits martini , simple and very rich in taste .

    Nashi or also known as Japanese Pear is a common fruit in Japan and some countries around Asia.   it has a high water content and a crisp , grainy texture .


    Nashi Martini ( Japanese Pear Martini )

    - Hendricks Gin - 45 ml

    - Nashi fresh Juice - 45 ml
 
    - Cordial Elderflower - 5 ml


     We tried to do as simple and fresh as possible since at the moment the Nashi's in the Japanese market are very juice and sweet with a lot of fragance .
 
      First step is making the fresh Nashi juice . Take a half medium pelled Nashi and cut it in big pieces . Put into a shaker and muddle it until you extract the juice .  Try to strain with a thin net strainer to take the grainy texture .

      Second step . Pour the Hendricks , Nashi Juice and Cordial Elderflower into a shaker . Filled the shaker with good ice . Shake it well and pour into a chilled cocktail glass . Garnish with a Nashi peel .

      Ps : It depends how sweet is you Japanese Pear , you may only need to use just a few drops of  cordial elderflower . Using a good gin with a floral taste makes a big difference in the cocktail . Try to make the Nashi juice just before you make the martini .

Who is BRAULIO ?






     Who is Braulio ? or What is Braulio ?

     You could have meet someone called Braulio but the one I mean is the italian bitter Braulio . it has a colorfull label which keeps your attention and the name too ...BRAULIO .
 
      The name comes from one of the mountains surrounding the valley of Bormio, Monte Braulio, on the slopes of which were collected most of the herbs, flowers, berries  used in the preparation of this unique beverage. Braulio's inventor was Mr Francis Peloni, pharmacist,  who came up with the recipe in 1875 . As always the recipe is a secret that goes from father to son ,etc . The only thing we know is that the recipe contains 13 herbs and medicinal plants like juniper berries , Wormwood ( absinthe ) , gentian roots , achillea moschata and  it is also aged in Oak barrels for 2-5 years .


     Braulio is a good digestive and it getting quite popular between the Japanese girls here . I don't know if it is because of the name or  the colorfull label or the taste .

After a good meal : BRASILBERG !!!




     After a good meal : Underberg.....or BRASILBERG !!! It all a matter of choice .

    If you are used to go to bars you probably may have seen usually on the corner somewherelse a little medicine like wrapped bottle . That's UNDERBERG  unmistakable little bottle , a german herbal bitters . If you haven't tried yet it is a good chance , as Underberg is quite popular in Japan and it is possible to find in most of cocktails bars around the country .  And if you know already Underberg ,  why not try the Brasilberg as well .




        For those who are used with the little Underberg bottle , when you see the Brasilberg bottle size you would get surprised . It fells huge . is there any difference between them ? yes , there is a little difference but as....
        .... Underberg , it cannot be explained...It must be experienced.... I'm not going to talk about the taste . But here are some of the differences :


  Brasilberg is made in Brazil : "On June 17, 1846, Hunbert Underberg founded the company H. Underberg-Albrecht in Rheinberg in Germany, starting the manufacture and sale of Underberg, a specialty made ​​with herbs.
In 1884, Hubert Underberg began exporting its product to Brazil.

In 1932, the grandson of the founder, Dr. Paul Underberg, moved to Brazil and began manufacturing the "Underberg in Brazil." This product manufactured in Brazil with Brazilian herbs has become, over the decades, a Brazilian specialty original and boasts henceforth the name " BRASILBERG - Underberg of  Brazil."


As the recipe is a secret , we cannot say the differences of both but Dr Paul Underberg used Amazon's herbs to cover the lack of some herbs in Brasil .



                                                         
                                                                        

 BRASILBERG :cont : 920 ml / 42% alcohol


  UNDERBERG : The bottle is small .

  cont : 20 ml / 44% alcohol

  It is made from a selection of aromatic herbs from 43 countries .






         Both of them have an amber color . The taller left-side glass is Underberg with a lighter amber color . The smaller right-side glass is Brasilberg with a darker amber color . 
      
  
 


     At the end , both of them are amazing and AFTER A GOOD MEAL : Underberg & Brasilberg is a good choice .

Time for a SHISO MOJITO .

Bar Trench's Shiso Mojito


     If you want to have a change and try something as refreshing as the Cuban Classic Mojito . We would recommend one of the mojito's variation : SHISO MOJITO .
     Shiso leaves , also called Japanese Basil leaves or Japanese Mint leaves , are  often used as garnish in Japanese restaurants . Shiso are that green round and pointy  edged leaves that's smells good but you don't know if you should eat it or look at it .
     Here in Japan would be easier for you as you can find Shiso leaves in any supermarket .



     SHISO MOJITO

    - White Rum ( I choosed "Santiago de Cuba") - 45ml

    - Shiso leaves - 4~5 leaves

    - Fresh Lime juice - 15 ml or quater cut lime

    - Sugar - 2 bar spoon .

    - Soda


     -  Combine  shiso leaves , the lime juice  and sugar in the glass and muddled slitly . Add the white rum and crushed ice in the glass . Mix with the bar spoon  . Top with soda ( wilkinson ) . Garnish with a Shiso Leave . optional : yuzu peel on the top to give a citrus aroma .

French Bastille 1789 - a new type of whisky

The French Cognac region is famous worldwide for its fine brandies but not so many people know that at the same Cognac region there is someone making Whisky . 

"French Whisky ?" would be the first question to come in mind , and all that taste of hard to drink whisky experience would be reminded in a split of seconds . But for our surprise , after we opened the bottle was quite astonished . An Floral fruity aroma came out , so we knew something different was about to be tasted .

Bastille 1789 is the name of this new French whisky . 


The taste was delicate and complex , with hints of cherry and oak barrel , and a rich vanilla flavor after drinking it . Even  people who are not familiar with whiskies would enjoy Bastille 1789 .


Bastille 1789 whisky is  different , new , and worth to try .


It took over 80 years to Japanese Whiskies to get  the taste they got today . At the beginning , according to some books , it was something undrinkable but now Japanese Whiskies have respect at the four corners of the globe . But this in another story ...


 … for the French whisky Bastille 1789 , they started with a good beggining .

立春朝搾り、縁起のいい日本酒で乾杯!First Harvest of Japanese Osake , cheers!

立春朝搾り

2月4日、立春は春の始まりの日。
前日の節分の日(季節を分ける日)の豆まきで邪気を祓って
正月のような新たな気持ちで春を迎えるたいへんおめでたい日です。
立春朝搾り酒とは立春の日の早朝に搾り上がった生原酒をその日のうちに飲むための酒です。
縁起がよく、とてもフレッシュな味わいが楽しめるのですが
普通は蔵元に行ってしか味わえない門外不出のお酒でした。

完全予約受注生産ではありますが、現在は酒販店の協力のおかげで
ここ東京でもそれが楽しめるようになっています。

前日からもろみを一晩中搾り続け,立春の日の未明に搾り上がった新酒を瓶詰めします。
この瓶詰めとラベル張り,出荷は販売店の有志たちが蔵元まで出向き徹夜で作業します。
そして近隣の神社の宮司さんにより家内安全、無病息災、商売繁盛を祈祷してもらい、
新酒を祓い清めてもらったらすぐに各地域まで車で持ち帰るのです。

今年はわりと暖かく、天候も良かった(と思われます)が
年によっては徹夜作業のあと吹雪の中、山道を急ぐおり、
お酒を載せたトラックがスリップして横転してしまったりという
ハプニングが起こってしまったこともあったそうです。
大事にありがたく飲ませていただきましょう。

去年に引き続き、西麻布のBar Qwangのご厚意により
恵比寿Bar Tram, Bar Trenchには各一本づつこの立春朝搾りを
入手する事ができました。
今日たまたまいらしていたお客樣がたと乾杯ができました。

春を祝い、一年の幸せを祈ってカンパイしましょう!
残りわずかなので飲んでみたい方はお早めに。

The 4th February is the beginning of Spring and called "Rissyun day".
After the "Setsubun Celemony day" known as throwing peas ritual for a purification ,
"Rissyun day " is a day to celebrate the start of new year in the ancient calender and new season. 

"Rissyun-Asa-Shibori-Sake"is  made and bottled in the morning of this Rissyun-day
.
Drinking it on the same day that had made causes a good fortune,and tastes very fresh and fruity. 
Usually it had been hard to drink it without visiting sake breweries.

Although order reservations are needed,with helps from Liquor shops and distributers,
we can enjoy those here in Tokyo these days.

The  brewers squeeze and strain raw fermented rice liquid all night long 
and bottle those in the morning of 4th of Feb.
Bottling ,attaching label stickers , packing ,delivering are by liquor shop staffs .
Those sake are blessed and purified by priests of shrine.
Then they bring those back to each local area.

Today was fortunately  good weather day.
But  It had been some traffic accidents while rushing through stormy winding roads
 in country mountain side.
 Let's drink it with much thankfulness.

Le "RISSHUN ASA SHIBORI SAKÉ"

Le 4 Février, c'est le jour du début de printemps au Japon.On l'appelle "RISSHUN".

La veille, le 3 Février, c'est  le"SETSUBUN" (le jour de séparer l'hiver et le printemps) , on seme des légumes secs . Cette acte signifie le rite de purification l'esprit malin.

On peut donc faire bon accueil à la son venue avec la humeur fraîche.

Boire le "RISSHUN ASA SHIBORI SAKÉ" ( le saké extrait le matin du "RISSHUN") est à la fois le porte-bonheur et le sake qu'on ne prête pas!

Pour le obtenir, il faut le réserver! Heureusement, on peut le goûter grâce à notre ami sans la réservation. A votre santé !

    The other day we got another international visit from some friends from Berlin . They introduced us  the local Berlin Vodka  "HELD " which has a quite different style from others vodkas .

     Held vodka started on 1921 , the time when a lot of things where going on in Berlin , specially in the art scene . Berlin in that time was very different from others german towns .

     It was nice to taste a vodka that keeps the local roots , something that we are loosing nowdays .

先日またまた海外からのゲスト、ベルリンから友人がやって来ました。ベルリンのローカルウォッカで普通のウォッカとはかなりスタイルの違う”ヘルドウォッカ”を紹介してくれました。

ヘルドウォッカはベルリンで特にアートの世界でいろんなことが起こっていた1921年につくられ始めました。その頃のベルリンは他のドイツの都市とはかなり違っていたようです。

地域に根ざしたお酒を飲むってことはとてもいいことです。今日ではなかなかできなくなってきていることです。

カンパイ!そして来てくれてありがとう。今度はベルリンで。

EMILE PERNOT visit JAPAN part II エミールペルノー アブサンが日本にやってきた その2

    LES FILS D'EMILE PERNOT distillery not only makes absinthe but others liqueurs as well . Like GENTIANE , SAPIN and GENEPI liqueurs . All those herbs are typical from the region .

エミールペルノー蒸溜所はアブサンだけでなくほかのリキュールもつくっています。ジェンシアン(リンドウ)やサパン(もみの木)、ジェネピ(ヨモギの一種)のリキュールです。これらのハーブはこの地域では一般的な植物です。





  

   Gentiane or "Yellow Gentian" ( bitter root) is quite often used in bitters, and it is considered a good fortifier for the human system , it helps the digestive system and it stimulate the LIVER ( for those who exaggerate in alcohol , sometimes it is good to give the LIVER a holiday ) .
ジェンシアンまたはイエロージェンシアン(苦い根っこ)はよく苦味リキュールに使われ、体を強くし、消化器官の活動を助け、肝臓を刺激すると考えられています。



   Sapin liqueur (Christmas tree ) with tonic is very refreshing , even with absinthe it suits well . Instead of using the sugar , some drops of Sapin liqueur  goes very well . Next month is december , Christmas season  , it would be a good chance to try .
サパンリキュールのトニック割りはとてもさわやかでリフレッシュできるドリンクで、アブサンにもよく合います。来月は12月、クリスマスの時期なので試してみるのにはいい機会です。



   Genepi liqueur goes well in many different ways , straight , on the rocks , with tonic , even with hot water taste good .
ジェネピはいろんな飲み方ができます。ストレート、ロック、トニック割り、お湯割りもなかなかおいしいです。
