Casino Royale Vesper Martini



   As everyone is talking about the 007  recently because ot the new James Bond Sky Fall movie playing in Japan now we are having a slitly increasing in Martini orders .

   That's a wonderfull chance to try the Vesper martini wich still an almost forgotten cocktail among the japanese .

   This variation on the Dry Martini is said to have been created by Gilberto Preti at Duke's Hotel , London , for the author Ian Fleming ( first James Bond novel , Casino Royale , published in 1951 )

  In the novel , Bond explains to a Casino bartender exactly how to make and serve the drink , " In a deep champagne goblet . Three measures of Gordon's gin , one of vodka , half a measure of Kina Lillet . Shake well until it's ice-cold , then add a large slice of lemon peel ."

  Well , We are in Japan , small martini glasses would suits better than a champagne goblet . For the Kina Lillet wich doesn't exist anymore since 1986 , instead it became Lillet Blanc with a different recipe ,  after the company was bought by the french Boire family . We replaced it with Kina L'avion D'or by Tempus Fugit spirits . For the vodka instead of a Russian or Polish vodka we choosed the french Grey Goose . And to finish off our interpretation , for the gin we choosed , instead of gondon , the Berry Bro's n 3 gin wich has a strong coriander and cardamon presence .


  


    Vesper Martini


     3 parts of n3 gin

     1 part of Grey goose vodka

     1/2 part of Kina L'avion D'or


     Mix all ingredients in a mixing glass until it gets cold , pour in a martini glass . Add a large lemon peel .

     For smaller martini glasses , all the measures are done by half .



      The Vesper martini , in the novel , was named after the  agent Vesper Lynd , wich at the end , she turns out to be a double agent . James Bond last words in the book were " The bitch is dead now " and he never ordered a Vesper martini since then .

    ps : since all 007 James Bond movies all umbelievable things were possible , the "Not stir , shaken please " would be one of the impossible things . Sorry James , We Stir .

All Spice Caqui Cocktail with Pimento Bitters 柿のカクテル



   A new bitters arrived on the trench shelf . Dale DeGroff's Pimento bitters !!! yes, exactly , a bitters made by the famous Mr"King Cocktail ". And what makes it more special , the pimento ( Jamaican word for all spice) bitters were made in collaboration with the renowned absinthe distiller T.A Breaux ( Eduard , Vs 1898 , Nouvelle-Orleans , Jade 1901 absinthes , Perique Tabacco liqueur ) .

   The Pimento bitters suits well in some 19th century style cocktails like Mai-Tai , Tikis , Old Fashions and  Sazeracs . And in modern cocktails too . Definitely it will give you a extra spice accent in your cocktails and straight spirits . Just have a try to se e the difference .


  As the Fall calls for 柿 Caqui ( Persimmon) fruits why not a cocktail :




 All Spice Caqui  柿とオールスパイスのカクテル

 - Reposado Tequila - 30 ml

 - 43 Liqueur (Spain) - 10 ml

 - half Caqui fruits cutted in pieces .

 - 3 dashes of Pimento bitters .

 - Gratted All Spice for garnish


  - Muddle all ingredients in a glass , add some ice . garnish with some gratted All spice .


 A super quick and easy to make cocktail .  A good recommendation for this Japanese Fall .

Dr Von Hyde's herbal Liqueur

 Bar Trench & Tram crew just came back from Berlin .

And to start : Dr Von Hyde's herbal liqueur








"The Mysterious case of Dr Von Hyde.
Once upon a time in a land far away lived a great man…Dr Von Hyde, something of an enigma in the small village he lived in, deep in the Bavarian countryside. A healer, ‘a cure for all’ was his motto. People would come from miles around in the hope the Doktor could cure their ills…
His success was unbelievable, a potion for this, a preparation for that. Something of a hoarder and herbalist, the Doktors’ house was full of the strangest curiosities and collections. It was his love of herbs and spices that became his true love though. The Doktor would spend days locked inside, creating new blends and herbal preparations. Getting ever closer to his perfect recipe, he could be heard laughing, shouting and even the occasional high pitched yodel!!!
Word was out that he had struck gold! Well, in the herbal sense, ‘the perfect elixir awaits you’ said the invite………
The good Doktor had invited the entire village to his small house for a celebration. It was quite fitting that a travelling circus was passing through, so they were also invited. Giants stood with local hunters, Chinese acrobats stood with bemused children. The mix of guests was amazing. Elephants grazed and tigers roared as the party carried on into the night…But where was the good Doktor??
No one had seen him, or heard from him.
He had simply just vanished…Where had the good Doktor gone?? The mystery still remains to this day…All around the world people can be heard celebrating, raising a glass of his famous herbal liqueur. ‘To the good Doktor, we salute you’ …….

PRE WARM UP FOR LONDON COCKTAIL WEEK 2012






    Just to get a Pre-Warm-up for the 2012 London Cocktail week in October we decide to make a brief visit in some of the cocktail bars in London . First stop , Savoy Hotel .






    Probably most of the good bars around the world has at least one Savoy cocktail book at the back bar as a recipe reference . As pleople say..."Behind every great bartender (literally) is a roughed-up, stained copy of The Savoy Cocktail Book..." .






     We were ready for the classics cocktails . Sazerac , Martinez , RobRoy , Hanky-Panky , BloodyMary , all surround by the jazz music played by the pianist . The last one , Corpese Reviver 2 , morning Glory & Gimlet ,  we had a chance to have at the Bar ,  really well excuted by Erick Lorincs .







   Next stop , ECC ( Experimental Cocktail Club ) , located in ChinaTown , quite hard to find since it has no sign , just an old little door .






     Nice selections of cocktails , good atmosphere with a speakeasy nuance . Cachaca Aged and Mezcal base cocktails are quite tasty . 








      To start the next night  , Callooh Callay   . A nice bar with some secrets on it . They have another bar on the second floor . How to come in....that's part of the secret too.

     If you want to have a Cow or Chicken : Tramshed is the place , exately , they have only steak or chicken for main dish . 


 Tramshed building used to be an old electricity generating station for trams . The first thing you see whem you come in is a kind of huge aquarium with a real size Cow & a Chicken in it . And a huge paiting of a cartoon Cow & Chichen on the wall . Just by looking at you can have a guess who made it : the English artist Damien Hirst

 The cocktails were made by the magical hands of Simone Caporale . It's not  always that we have a chance to have cocktails made by world top bartenders . it was time to enjoy .
