アイルランドでもっとも尊敬されているシンガー／ソングライター／ギタリスト、
Paul Brady（ポール・ブレディ）がオン・ザ・シェルフにやってきました！！

60～70年代は、トラッド・バンド「ジョンストンズ」、
伝統音楽の革新を推し進めた伝説的バンド「プランクシティ」のメンバーとして活躍。
78年に初のソロ・アルバム『ウェルカム・ヒア・カインド・ストレンジャー』をリリース。
80年代以降は自らのソングライティングの才能をいかし、
コンテンポラリー系の活動に転向。
現在までに8枚のオリジナル・アルバムを発表し、
いずれも世界的に高い評価を得ている。 
またポールの書く楽曲はボニー・レイット、ジョー・コッカー、
ティナ・ターナー、フィル・コリンズ、デヴィッド・クロスビー、
ポール・ヤング、 モーラ・オコンネルなど、
多数のアーティストによりカバーされている。
更に、エリック・クラプトン、マリアンヌ・フェイスフル、
メアリー・チェーピン・カーペンター、
マーク・ノップラーらの作品に参加・共演するなど、

     It is a quite rainy day in Tokyo to start our monday and to start our week I was in the mood for one of my favorite cocktail , MARTINEZ but at the same time I was in the mood to have one of my favorite cachaca , SELETA . In the doubts of which one to choose I decide to have both in one . The results : SELETA MARTINEZ COCKTAIL .

    Martinez cocktail is a quite old cocktail . Its origin still a bit unclear but in1887 Jeremiah Thomas book "The Bar-Tender's Guide" was the first book to be found with the recipe . Some says "Professor Thomas" created this cocktail for a traveller who was on the way to the town Martinez , California . The cocktail consists in genever gin,sweet vermouth,maraschino liqueur and back on the days Boker's bitters .

   Seleta is a brasilian artesanal cachaca which it can be found in Japan as well . Made in the town of Salinas ( Mecca of artesanal cachacas ) and aged with Umburana barrels . Cachaca Seleta producer is a famous man in the cachaca world known as "Captain Toni "

SELETA MARTINEZ COCKTAIL

- 30 ml cachaca Seleta

- 45ml Antica Formula

- 5 ml Luxardo Maraschino

- 2 dashes of Boker's bitters

- 2 dashes of chocolate Bob's Bitters ( it can be found in some specialized stores in Tokyo )

garnish - orange peel

.Stir all ingredients in a mixing glass with ice ( choose a good clear ice to avoid to have a watery cocktail ) pour in a chilled cocktail glass .

The tasting notes of this cocktail is amazing . Seleta itself suits quite well with chocolate and orange peel and the Umburana wood has a quite after taste presence . All together with the sweet vermouth , marasquino and the bitters we have a cocktail a rich and complex in its aroma and taste .

I recommend for all Martinez lovers to try once the Seleta Martinez .

Jamaican Beff Jerk Cocktail

    It's monday , first day of the week and most of the bars around the world starts the night in a slow pace .
    Tonight we start the night 20 minutes before we open with 2 long timers regulars .

    Planning to go to dinner right after , the 2 regulars first&second drink were a Bloody Ceaser and then came the last request : can I have a smoky fresh soup kind of drink without tomato ?

   Feeling that the dinner that night was going to be posponed I came up with this monday starter of the week cocktail .

   Jamaican Beef Jerk cocktail

   -white jamaican rum (lemongrass infused) - 15ml
   -vodka - 30 ml
   -fresh squeeze grapefruit - 90 ml
   -Laphroig 10 years - tea spoon
   -Bitter end Jamaican Jerk - 3 dashes
   -Celery Scrappy's bitters- 2 dashes
   -Garnish: mix of salt,blackpepper,celery salt- glass rim
   -2nd Garnish : piece of beef jerk

   .shake: rum,vodka,grapefruit,celery bitters and pour into a rock salt mix rimmed glass .
   .add: 3 dashes of Jamaican jerk bitters & 1 tea spoon of Laphroig 10 years .
   .Finalize with a piece of beff jerk for the costumer give a bite before drink .

   And here we go. We have a smoky fresh soup kind of drink .

   That's our Monday starter cocktail .

Maïa Vidal
1988年カリフォルニア生まれのシンガー・ソングライター、 マイア・ヴィダル（Maïa Vidal）がON THE SHELF TVに。
 アコーディオン、ヴァイオリン、トイ・ピアノ、グロッケンシュピール、 パーカッションなどを演奏するマルチ器楽奏者。
 幼い頃にNYへ移転、ヴァイオリンを習い。高校生の頃は女の子だけのパンク・バンドを組んでいた彼女。 その後、カナダ・モントリオールのコンコルディア大学でアートを学びながら、 「Your Kid Sister」プロジェクトをスタート。
2009年にバルセロナへ移転。 Your Kid Sister名義で『Poison』という5曲入りの自主制作EP （ティム・アームストロング率いるカリフォルニアのパンク・バンド、 ランシドの原曲をワルツやボサノヴァ風に編曲したカヴァー集）や、 3曲のビデオ・クリップを自主制作しています。 
スペインのブランドDesigual’sの広告キャンペーンでクリスチャン・ラクロワのデザインによる 「DREAM… AUTUMN/WINTER 2011/2012」の作曲を担当。
 2011年にファースト・アルバム『ゴッド・イズ・マイ・バイク』をベルギーの クラムド・ディスクよりリリース。

Maïa Vidal uses violins, accordion, guitar, percussion, toy instruments and her distinctive, moving voice to compose and arrange her own unique music.

God Is My Bike, a fresh and surprisingly mature debut album for such a young artist, was recorded in Barcelona. Giuliano Gius Cobelli engineered, coproduced and played the trumpet and the drums. MarcRibot played guitar on two songs. MAÏA sang and played all the other instruments.
This album is Maïa Vidal’s second recording, after Poison, a self-released EP she recorded under the name Your Kid Sister, which contained versions of punk anthems by Rancid transformed into haunting lullabies and plaintive waltzes, a homage to the songs Maïa loved as a teenager.
Maïa shares her time between Barcelona, New York & Paris.

来る2月12日(日)、中目黒のはずれのLoungeにてTRAM音楽祭を行います！

TRAMに縁のあるミュージシャンのライブに加え、

スタッフ参加バンドの演奏もございます！

そして今回はBAR TRAMの一員のJの送別会でもあります。

ご存知の方もいらっしゃるとは思いますが、

Jが2月15日でカナダに帰国する事になりました。

ミュージシャンである彼は帰国後、レコーディングと

北米ライブツアーを控えております。

非常に残念ではありますが、是非皆様と御一緒に

賑やかにを見送ってあげたいと思っております。

第3回アブサン”グリーンアワー” in Tokyo レポート

A long long time ago , in the days before absinthe had been prohibited , ladies and gentlemen would indulge in a cafe the joy of " GREEN HOUR " after a long day of labour .

むかしむかし、アブサンが禁止される以前、人々は労働の長い一日を終えたあとカフェで”グリーンアワー”の楽しみに熱中したものでした。

Ebisu Tokyo, November 26, forgotten century. On a chilly august evening hundreds of finely attired Tokyolites traversed this dark corridor to be part of Absinthe Tokyo's third semi-annual Green Hour Festival.

11月26日。東京、恵比寿。ひんやりとした夜、上品にな装いをした東京人たちが、”グリーンアワー”に参加するためこの薄暗い廊下を渡ってきた。

The stage for the evening's events, for the second consecutive time, were the spacious grounds of the Nakameguro underground speakeasy Berry. A venue that in older days used to house a factory, the air has now been made pungent with absinthe and the space filled with people thirsty to make acquaintance the green fairy.

今夜のイベントの舞台は前回に引き続き、中目黒のアンダーグラウンド、スピークイージー、”ベリー”の広い空間である。昔は工場だったというこの会場は、アブサンの効果で刺激的な空気となり、緑の妖精と出会うためにのどを乾かせて来たひとたちでいっぱいになった。

What absinthe event is complete without an abundance of paraphernalia and bygones of yesteryears. After all we're not just here to get drunk.

大量な道具と今では使わない家庭用品がなければアブサンイベントは成り立たない。だって僕らは酔っぱらうためだけにここにいるわけじゃないんだから。

This is the watering station, where dreams are made. Clouded drinks and clouded judgement.

Not unlike the absinthe, the people began to pour in - from every corner and from under every rock of the world.

Dressed, undressed, over dressed, under dressed. "I didn't know there was a dress code". "There isn't". Do real green fairies wear clothes? As a side note no one has ever experienced the height of the belle époque, and we experience it now through pictures. So why all the hats?

正装した人も、してない人も、着飾りすぎたひとも、普段着の人もいた。「ドレスコードなんてあったの知らなかった！」「そんなのないよ」。いったい、緑の妖精って洋服着てたのかな？ちなみに、誰も18世紀のベル・エポック期を経験したことはないけど、今こうしてこれらの写真を通してそれを体験できるだろう。じゃなければ、なんだってみんな帽子を被ってるんだ？

The ghosts of walls before long to be part of the present. They are left painted and forgotten, as are their smells, stains, and sentiments.

The bands plays through the haze of inebriation.
酩酊のもやの中、バンドが演奏する。

And what enchanting evening would be complete without a burlesque show to stimulate one's appetite for alcohol.

そしてアルコール欲を刺激するバーレスクショーがなければ、魅惑的なイベントははじまらない。

And did God create DJs in his own image? We are led to believe that he did.

And on the thirteenth day God said let there be dance, shortly after proclaiming the existence of absinthe.

Of the nights many events was the crowd riling absinthe fountain competition. Since the invention of the wheel, man has strived to improve on what is arguably his second greatest invention - the absinthe fountain. Emotions ran high, higher than both the Superbowl and Sumo championship put together, as the convention disputed over who would be crowned captor of the prestigious title of Japan Absinthe Fountain King vol 3.

車輪の発明以来、ひとは二番目の偉大な発明の改良に努めてきた。
アブサンファウンテンである。
日本のアブサンファウンテンキングの栄光ある優勝者は誰になるのか？
スーパーボールと相撲のチャンピオンシップをいっショにした以上にアツくなった。

The circus master attempts to contain the savages

Contestant #1: Fantasy shower by Nigamushi Tsuyoshi

Aptly renamed the 'golden shower' during the nights festivities, this piece of engineering is the second brainchild of the absinthe fountain heavyweight Nigamushi. A known disciple of Thomas Edison himself, this creation represents the height of Nigamushi's creativity - a mysterious box out of which protrudes a shower head and a hand pump. And of course, after the absinthe the user can wash either their hands or their miniature poodle. Nice.

その夜ゴールデンシャワーとその名を改められたこちらは、アブサンファウンテン界の重鎮ニガムシツヨシの第２作目となります。
トーマスエジソンの弟子のニガムシ氏の創造性の高みを象徴する作品ーミステリアスな小箱からシャワーヘッドとハンドポンプが飛び出しています。
そしてもちろんアブサンを飲んだ後には手やミニチュアプードルを洗うのに使えます。

Contestant #2: Medicine by EvilTHelL

After years as a consumer of Absinthe, and quite possibly a consumer of harder confectionaries, the inspiration for this fountain came to it's creator, EvilTHeiL,Mr.D in the form of a dream. It is said that during a deep REM slumber flashes of lights, syringes and absinthe flooded the dreamer's cerebral alleys - and thus this fountain was born. To avoid the spreading of aids and other transmunicable diseases this fountain is cautiously made with only one water server. An absinthe fountain for the streets, let's keep them clean.

この何年もアブサンを飲み、そして固いお菓子の食べ続け、このファウンテンのインスピレーションがEvilTHeiL,D氏に夢の中に現れた。
深いレム睡眠の閃光の間に注射器とアブサンで脳の小道が満たされるという。
このファウンテンはそのように生まれた。
エイズやその他の病気を防ぐため、念のためこのファウンテンは蛇口が一つしか付いていない。
ストリートのためのファウンテン、常にクリーンにしておこう。

Contestant #3: La vache mere du Vals de Travers by Seiji

Made exclusively of parts obtained from the streets of Tokyo, or purchased at the japanese dollar store, 'La vache' is a fountain for either the homeless or low budgeted absinteur. In the olden days the herbs used in the distillation of absinthe were, after the absinthe was made, sometimes fed to the cows. As legend has it there was once one cow, in the small region of Vals de Travers Switzerland, that went mad, her eyes turned red, and would no longer produce milk. After weeks of frustration it was then discovered that if milked into an absinthe glass, instead of a bucket, the cow would produce the finest absinthe the locals had ever tasted. After only a few days of hard service the cow fled to the swiss countryside and was never seen again. The creator of this fountain, Seiji, claims that he never made this fountain, but that he only acquired the materials, and one day the cow appeared outside the front door of his apartment. Tokyo aficionados affirm that perhaps the cow is back.

東京の路上から拾ったか、百円ショップで買ったパーツ特製の”牛”ファウンテンはホームレスやお金のないアブサン愛好家のためにつくられました。
昔むかし、アブサンの蒸留に使われるハーブはアブサンを作ったあとときどき牛のえさにされていました。スイスのトラヴェール地方に、ある牛が気が狂い目が赤くなりミルクが出せなくなったという伝説があります。数週間の苦悩の後、バケツではなくアブサングラスにミルクを注ぐとその牛は誰も味わったことのない極上のアブサンをつくるようになったのです。数日間だけアブサンを作ると、さらに田舎の方に逃げていってしまいその後二度と発見されることはありませんでした。
このファウンテンの作者であるセイジ氏はこのファウンテンをつくっていないと言います。
ただ部品を集めておいたらある日、彼のアパートにドアの外にこの牛ファウンテンが現れたのだと。東京の愛好家はその牛がおそらく帰ってきたのだと断言します。

Contestant #4: Hesher by Astro Motor Works

At the beginning of the nineteenth century, the development of industrial techniques lead to a race for what still remains to be one of the most sought after dreams of modern engineering - the ELECTRICAL BRAIN, similar to what is known nowadays as the "computer". Though this fountain falls, if only a few steps, short of this goal, we at least know that the maker had absinthe on his mind. Made up of surplus electric brain parts from before the bursting of the high tech bubble, this fountain represents a new era in technology. After being let go from his high tech job, Astro Motor Works,Mr,T lived in a one room apartment with only his fish. After he could no longer afford to feed his fish,and was forced to eat their remains, he was left with only an aquarium and a variety of computer parts. Out of which he has now become the proud creator of 'Hesher'.

このファウンテンはゴールには数歩届かなかったのですが、少なくともアブサンが彼の頭の片隅にあったのだと分かります。
ハイテクバブルが崩壊する前の余剰パーツでつくられたこのファウンテンはテクノロジーの新時代の幕開けを表現しています。
ハイテク産業から離れる前アストロモーターワークスのT氏は魚と暮らしていました。

Contestant #5: Micro Absinthe Dripper by R.

After hundreds of days travel on a japanese donkey in the eastern countryside, the inventor of this fountain, R, sought to create a fountain that was both portable and reliable, and made for horseback travel in the rugged outdoors. On one early summer morning, struggling with starvation and dehydration, R entered a japanese supermarket and left with two small paper bags. Within days he converted them into the 'micro absinthe dripper' - an absinthe fountain capable of miles of travel that can be fastened to either a belt or the side of your donkey. The need for something light and adherence to japanese space restrictions have resulted in a set that includes a spoon measuring 40 mm in length and a glass of 60 mm.

ドンキーにのって数百日の旅をした後、このファウンテンの作家、R氏は持ち運びで可能で信用でき、厳しいアウトドア環境に適したものをつくりました。
ある夏の朝、空腹とのどの渇きに苦しんで訪れた日本のスーパーマーケットから二つの小さな紙袋を携えて帰りました。
数日中にそれらは“マイクロ　アブサン　ドリッパー”に作り替えられていました。
軽さの追求と日本の厳しい住宅事情に合わせた結果このセットには４センチのマイクロアブサンスプーンと６センチのマイクロアブサングラスが採用されることになりました。

Contestant #6: Heron‘s Fountain by Kazuma

Inspired by the work of 1st century inventor Heron, Kazuma has invented "Heron
’s Fountain", a fountain that bewildered spectators and left them going home with something to think about - science. Hydraulics, pneumatics, perpetual motion, gravitational potential energy, absintrifical fortification of the stratospherical unconscious... Concepts beyond the mind of the average absinthe bear. A project that spent years in development, Heron is the pinnacle of complexity, creativity, and alcoholism. Our hats are off to this years winner - and Tokyo absinthe fountain king.

１世紀の発明家、ヘロンにインスパイアされてカズマ氏は"ヘロンのファウンテン”を創作しました。このファウンテンは見る者びっくりさせ、科学について深く考えさせます。
水力学、空気力学、永久機関、潜在重力、アブサン科学的築城術などなど。
開発に数年を費やしたヘロンのファウンテンは複雑性、創造性、アルコール依存症の頂点である。
今年の優勝者、アブサンファウンテンキング。に脱帽

And if the nights festivities could somehow leace you unfulfilled - MISS CABARETTA . With livers filled to the brim, this sultry seductrice filled the dreams of many absintheurs both male and female.

This guy was sure left happy and fulfilled.
こちらの方はハッピーで満足。

And at the same time the crowd shows signs of exhaustion - mainly mental.

そして同時にみんなは疲れの兆候を見せ始めた　主にメンタルに

The spoons are down, the glasses empty. A fine hour spent with absinthe a plenty.

使用済みのスプーン、グラスは空っぽ。大量のアブサンとともに素晴らしい時が流れた。

   Absintment , we have to wait until the next Absinthe Green Hour .

アブサンパーティーが終わる感傷、次のグリーンアワーを待たねば。

ハイティーンの頃にバンドネオンを学び始め、その後はタンゴ楽団の一員としてヨーロッパにも演奏旅行に出掛けたり、オルケスタ・ティピカ・フェルナンデス・フィエーロの創成期に参加したり。
現在は文教地区パレルモを中心とした音楽シーンでシンガー・ソングライターとして活躍。人間らしさとポルテーニョ（ブエノスアイレスっ子）のエッセンスを知識ある若者の言葉で、叙情を感じさせる音楽に仕立ててアウトプット。
’11年の最新作「Me Arre Piento de Todo」をプロデュースしたリサンドロ・アリスティムーニョら多くの同世代ミュージシャンたちのアルバムへも客演しています。
日本盤でリリースした16曲入傑作選「新観世音 – ヌエバ・カンゼオン」（TAIYO 0009) に収録の”７日間”、”グアレグアイ”、そして映像作家ヴィンセント・ムーンのTHE TAKE AWAY SHOW #104 にても撮影された”馬に乗って”など、シングアロングを巻き起こす名曲たちと、おもちゃの楽器まで用いた劇場形パフォーマンスはとても好評を得ています。

昔々、まだアブサンが禁止される今から約１００年前まで、

紳士淑女たちは毎日のしごとを終えた後

カフェでアブサンを楽しむ時間、

グリーンアワーを至福のひとときとして過ごしたのでありました。

アブサンを楽しむイベント”グリーンアワー”を行います。

愛好家（中毒者）はもちろんのこと、アブサンマニア以外の人たちにも

アブサンに触れてもらうきっかけとして企画したカジュアルなパーティー。

内容はというと少しだけおしゃれをして、

みんなでアブサンを飲む、

というだけのこと。

ただし、アブサンは最高のものだけを提供させていただき、

飲み方もアブサンファウンテンを使った

伝統的水割りスタイルで楽しんでいただけます。

今回はモーリアマンシーニ楽団の演奏をバックに

Miss Cabaretttaによるバーレスクショーが決定。

試飲ブース、アブサンのお菓子コーナー、アブサンツアーの案内所などなど

美味しいです。

100年前、禁止前のデッドストック、プレバンアブサン

当時もののアブサンスプーン

一見同じように見えても

かなりいろんなバージョンがあります。

同型でも金属の厚みが違ったり、

銀製だったり。

初めてみたファウンテンのタップの先の細工

しかも６口です。

アンティーク屋さんによると

当時の所有者が改造したのではないか？

とのことでした。

これはかなりのレアアイテム

ボビーギレスピーらもよく来るらしい。

時間の重みを感じます。

この光景、夜の２時過ぎです。

ロックが爆音でかかる中、

70過ぎに見えるおじいさんと若者が戦っています。

アフリカ系クラブです。

フェミクティーらもライブをしに来るとか。

以前は法律ぶっちぎりで無許可営業をしていて

御用となってしまったようですが

場所を変えて、みごとに大復活。

中にいるのはほとんど黒人で

はっきりいって

結構怖いですが、実際飛び込んでみると

みんなとてもフレンドリーです。

エントランスもドリンクも安いし

かなりいい店。

こんな場所が家の近所にあれば幸せだろうなと思います。

今日はフリーセッションの日。

こちらのミュージシャンはみんながみんなレベルが高い。

音楽で食べていないんでしょうけど

プロ以上にすばらしい才能を持ってるようにみえる人も

たくさんいます。

本当に毎回すばらしい演奏を見せてくれます。

とくにレゲエのMCバトルは最高です。

かなり人気のないウラ通り

なかはかなりのにぎわい

とにかくドリンクのリストがユニーク！

店内の一画にガラス張りで立ち入れない、

さながら実験室のような小部屋があります。

カジュアルすぎず、フォーマルすぎずちょうど良い塩梅の

インテリアや雰囲気です。

決して安い店ではないのですが

ドリンクをオーダーするのが大変なくらい

わりと若い層のお客さまで大繁盛しています。

そして２度目の訪問となるPURLへ

こちらも予約が必要な人気店。

紙袋に入っているのは持ち込みのビール、ではなく

ユニークなカクテルで、となりのショットグラスとセットです。

カウンター中央にはアブサンファウンテンが鎮座

これまたかなりユニークなメニュ−

樽熟成カクテルリストと瓶熟成カクテルリスト

なんとミソを使ったカクテル

美味しかった。

金属の器に入ったこちらは

アブサンのカクテル、

泡がアブサンでできています。

今日のスタッフのうちのひとり。

バーテンダーそれぞれが

才能やクリエーティビティーを追求している印象です。

ロンドンの中心から電車で約30分、

ハマースミス駅のとなりの駅。

Hammersmithといえば

The Clash の名曲“Whiteman in the Hammersmiths Palais"

はじめてロンドンを訪れたとき

ハマースミス駅を通っただけで

感激したものでした。

近年、この駅にあるライブハウスのハマースミスパレスが

取り壊しになったときに、デーモンアルバーンの計らいで

地上げによる取り壊しの直前に

ポールシムノンが何十年かぶりに

そのステージを踏んだ、とのニュースが

記憶に新しい。

そしてそこは元"Tram"(路面電車）の車庫を改装してできた

ジャズクラブだったそう。

そんなわりと住宅街の一角にある

故マイケルジャクソン氏のオフィスを改装してつくった

小さな蒸溜所です。

さらに歴史をさかのぼると

ローカルパブのための小さな醸造所だったようで、

お酒とつながりが深い。

とにかくインディペンデントという言葉に弱い...

営業担当James氏のガイドで

Gin ,Vodka, スロージンなどを試飲します。

ロンドンでもっとも新しい、最も古いスタイルの蒸溜所として

酒造ライセンスが与えられたのは３年前、

銅製の蒸留器を設置する蒸溜所がロンドンにできるのは

約200年ぶりだとか。

現在も稼働中

鍵は酒税法と関係してるんだとか。

天井ぎりぎりまでネックからの配管が

蒸溜釜の覗き窓

オレンジピール、手でむいてるでしょう？

ジュニパーベリ−、コリアンダー、リコリス、アンゼリカ、

オーリスルート、アーモンド、シナモン、

オレンジピール、レモンピールなどが使われています。

かなりハンドクラフト感があります。

一回の蒸溜で約200本分というスモールバッチです。

クラフトマンシップによるプロダクションはもちろんのこと、

近年ロンドンも含め世界中の都市でローカルスピリッツの価値が

見直されているように思えます。

個人的にはこのトレンドは歓迎しています。

出荷待ちのケース

ロンドンらしい曇り空の中、

これからセンターにもどって酒の勉強会に参加します。

イギリス国内で唯一の右側通行の道路

と言われるエントランスアプローチ、

とても写真を撮れる雰囲気ではありませんでした。

伝統あるハイクラスホテルに共通する

尋常じゃない空気感が漂っています。

ラッキーなことに、ここによく来るという、

地元ロンドン在住のバージャーナリストが

同行してくれることになり

初めて足を踏み入れます。

ミクソロジストならぬミクシコロジストの表記

American Bar のバーテンダーの方たち　

Mr.Ladislav 氏（右）は

とても親切でカクテル研究にも熱心なジェントルマン

最近ついにSavoy Cocktail Book の初版本を手に入れたとか。

彼におすすめのカクテルを２杯つくってもらいました。

初めて見たオレンジキュラソーも使用

クラシカルなラベルですが
実は新製品だそう。

いただきます！

ちなみにこちらは10年くらい前初めてロンドンに行ったとき

購入したSavoy Cocktail Bookです。

日本語版も発売になりました。

実はこの中には百数十種類のアブサンを使ったカクテルが

記載されているそうです。（141種だったか？）

いつか改めてカウントしてみようと思いますが、

確かにパラパラとめくると、

かなりあちこちにAbsintheの文字が見つかります。

いかに当時、アブサンがポピュラーなお酒であったかが

うかがい知れます。

ただし出版されたのは1930年代で

世界的にアブサンが製造販売禁止となった

後のこととなります。

（イギリスではアブサンを禁止する法律は特に施行されてはいないそうです。）

バスは来ないが

Blubellが　恵比寿Bar Trenchにやってきた！

ブラジル・サンパウロ出身の可愛いらしい女性シンガーBLUBELL（ブルー・ベル）が

ON THE SHELFにやってきました！

可憐みを演出し、憂いの風景まで描き出すジャズ・ボサ・ノヴァのスタイルの彼女が

Vo + G + B のトリオ編成で初来日。

来日公演は残念ながらすでに終わってしまいましたが、

日本での最後を締めくくるようにON THE SHELFでプレイしてくれました。

多彩なボードヴィルの戯けしさからラテン・ブーガルーへと、

トリップ・ホップ登場以降の音楽背景の影響を感じさせる憂いの風景を

モダン・ジャズ・フォーマットのみに留まらない多彩さで

アコースティック楽器の生演奏を従えて描き出す新作

”EU SOU DO TEMPO EM QUE A GENTE SE TELEFONAVA”も注目です。

現地紙でマリーザ・モンチやマル・マガリャンエスと並んで賞賛される

今年もアブサンティアード運営委員会から招待状が届きました。

今回も審査員を務めるためフランス、ポンタルリエへ

TGVでパリから約３時間半で夕方のポンタルリエへ到着

泊まろうと思っていた宿に行ってみるものの受付が18：00まで

とあり、電話しても誰も出ません。

しかたなくアブサンティアード会場へと直行します。

年に数回しか会うことのない

アブサンピープルが世界中から大集合しています。

Bar Tramに来てくれた人も何人かいて

再会します。

ブラインドテースティングで

色、香り、味の三項目について

それぞれ点数をつけていきます。

今回は以前の反省を踏まえ、

ちょっともったいないですが

ワインのように

テースティング後はなるべく飲み込まずに吐き出します。

前回はちょっと酔いすぎてしまい、

ちょっとホテルで休憩、のつもりが夜のパーティ−に大遅刻。

アブサン業界関係者部門のため

会場は一般とは違うデコレーションのない部屋で行われました。

ゴールデンスプーン賞はどのアブサンに？

結果は翌日の一般部門とVIP部門の審査を経て

集計され翌々日の夕方発表になります。

あっという間にもう22時過ぎています。ハラペコなので徒歩で

毎年恒例、町内で一番モダンなホテルのレストランでの夕食会へ。

昔は郵便局だった建物をリノベーションしたホテルのレストランカフェで

フレンチをいただきます。

アブサンソースのチキンタリアッテレ添え

は残念ながらもう売切れでした。

ドリンクは持ち込みのエミールペルノ社の新作アブサン。

町をあげてのイベントなので今夜はアブサンの持ち込みはOKなようです。

地酒ですからアブサンは当然メニューにもたくさんのっています。

食事を済ませてホテルの部屋でのパーティーへと移動します。

ドイツから来ているアブサンショップチームの大部屋です。

窓から見える静かで美しい町並みとは裏腹に

アツい飲み会が始まります。

ファウンテンやらグラスやら珍しいアブサンやらかなり

準備が万全です。

ドリンクはもちろんアブサンオンリー。

グラスはもちろんポンタリエグラス。

ビールなどはありません。

フランスの田舎町のホテルの一室に集まっている人々、実は

ニューヨーク、ロサンジェルス、チェコ、ベルギー、地元ポンタリエ、ドイツ、イギリス、ベルギー、そして日本から、とかなり様々なところから来ています。

スイス産のアブサン、初めて見た銘柄です。

こちらも初めて飲みます。

チェリーとアブサンのリキュール

きれいな赤色

なかなか美味しい。

おなじみのフュジェロールブランシュや今回入賞することとなるSevil Absinthe

世界で500本限定生産の野生のニガヨモギを使ったプレミアムアブサン”Sauvage”,

100年前のビンテージアブサン、などなど

信じられないことに、

ほとんどのボトルがカラになりました。

さすがにお疲れの方も。

おやすみなさい。

ポンタリエ在住の友人宅に泊めてもらうことになり

パーティー会場を後にします。

そして結局明るくなるまで家飲みに。

明日は蒸留所めぐりへ。

アブサンバー訪問記 in Paris "Cantada"（カンタダ）

今年もポンタルリエのアブサン品評会”アブサンティアード”へ参加して

３日間さんざん白濁した後

パリの町へと帰ってきました。

パリへ行くとだいたい毎回立ち寄るアブサンバー

”カンタダ２”へ今回も行ってきました。

北マレの夜はわりと危険なエリアにあるこの店。

ヘビーメタル？ゴシック＆フェティッシュバーの

雰囲気です。その手のイベントもよくやっているようです。

見えないような場所にまでゴシックアートが満載です。

カウンター下もペインティングがぎっしり、

実物大の棺桶（本物？）もいくつか直立しています。

中は普通に収納として使っているのでしょうか？

アブサンに関してはずいぶんと前から品揃えがよく、有名店です。

以前フランスのテレビ番組にも取り上げられたりしているようです。

もちろんファウンテンも数基あってポタリが楽しめますが

ビアサーバーの端にある水のサーバーでスタッフにポタりを

お任せすることもできます。

またカウンターの両端には２基、オリジナルの

大型ファウンテンが据え付けられています。

価格はかなり良心的です。

ただし意外にもフランス規格のお酒のメジャーカップの

シングルの量は日本よりずいぶんと少ないのが普通です。

ツボをおさえた品揃えで最新のものや

かなりのレアものも在庫しています。

ワインのセレクトもなかなか良さそうです。

今回は新発売の花の香りがする軽めのドイツアブサン、

CLENDULAなどをいただきました。

パリの夜は結構早いんです。

２時にはだいたいのカフェやバーは閉店してしまいます。

またも閉店まで白濁してしまいました。

思えばこのお店からアブサンについて色々と貴重な情報を

いただいたのをきっかけに

アブサン探求が加速したのでした。

Nashi Hendricks Martini ( Japanese Pear Martini )

    Just a couple of weeks before the " Nashi " season comes to an end ,we would like to introduce a nice fruits martini , simple and very rich in taste .

    Nashi or also known as Japanese Pear is a common fruit in Japan and some countries around Asia.   it has a high water content and a crisp , grainy texture .

Nashi Martini ( Japanese Pear Martini )

- Hendricks Gin - 45 ml

    - Nashi fresh Juice - 45 ml

    - Cordial Elderflower - 5 ml

     We tried to do as simple and fresh as possible since at the moment the Nashi's in the Japanese market are very juice and sweet with a lot of fragance .

      First step is making the fresh Nashi juice . Take a half medium pelled Nashi and cut it in big pieces . Put into a shaker and muddle it until you extract the juice . Try to strain with a thin net strainer to take the grainy texture .

      Second step . Pour the Hendricks , Nashi Juice and Cordial Elderflower into a shaker . Filled the shaker with good ice . Shake it well and pour into a chilled cocktail glass . Garnish with a Nashi peel .

Ps : It depends how sweet is you Japanese Pear , you may only need to use just a few drops of cordial elderflower . Using a good gin with a floral taste makes a big difference in the cocktail . Try to make the Nashi juice just before you make the martini .

Release the KRAKEN sipice rum

"It is said that a ship carrying one of the largest quantities of Black spiced rum ever to be brought over from Caribean Islands , for unexplained reasons , never reached its destination . Stories were plentiful , and while an attack by the KRAKEN is suspected , no stories were ever confirmed . Barrels carrying this black spiced rum drifted off the ship into the sea and the rum was renamed after the KRAKEN as a tribute ( some say as " sacrifice " ) to this beast's unchallengeable power and might . As they say ," to no respect the power of the KRAKEN is to not respect the Sea ""

   That's what the myth is said but besides all those stories and the cool designs around Kraken rum we would say Kraken is a nice spiced rum . It has more flavour than Captain Morgan and the 94 proof gives you an extra punch .

   There are many ways to drink Kraken but we would recommend neat or "on the rocks " just to feel the flavour of the spices and if you have a chance try the others spiced rums in the market as well . You could realise that this world is not only made by only one CAPTAIN ...

今年もまた年に一度のアブサン品評会、
”アブサンティアード”の季節がやってきました。10/1と10/2の2日間です。

今年もまたBar Tramチームスタッフは審査員として
参加することになりました。
フランスとスイスの国境近くの町、
かつてペルノ社がアブサン工場をつくり、
アブサンの首都として栄えたポンタリエという町で開催されます。
世界中からアブサンのプロデューサー、
販売関連,その他業界に関わる人たちと
アブサンファンが集まるこのイベントも
今年でなんと11回目となります。
良質のアブサンを作ることで有名なエミルペルノ蒸溜所や
フランソワギー蒸溜所があるこの町は
パリから約500キロ離れた、古い景観を残す美しい町です。

今年はどんな新商品がエントリーし、
誰のアブサンが優勝するのでしょうか？
審査員は次々運ばれて来るラベルのないアブサンの
白濁する様の美しさ、香り、味の３項目を
評価、採点していきます。

キュブラー　スイスアブサン　記念限定ボトル　キュヴェ・ドゥ・サントネール

アブサン誕生は、１７６９年，フランスとの国境に近いスイス北部、

ヴァル・デ・トラヴェールで薬用として生まれたのが最初で，

後にペルノ社創業者アンリ・ルイス・ペルノ氏がこの地を訪れ，

最初の蒸留器を設置し、

現在では“アブサン誕生聖地”として広く知られています。

キュブラー社の前身、ブラックミント社は１８６３年

創立後、ヴァル・デ・トラヴェールで

アブサンだけを造っていたキュブラー家の３代目イヴ・キュブラーが買取り、

曾祖父が残した伝統的な秘法を継承し今日に伝えています。

曾ってオスカー・ワイルドが，爽やかな香味と

透き通る緑色から

《緑の妖精 The Green Fairy又はLa Fee Verte La Fee Verte 》と呼び，

多くの詩人や芸術家達を虜にしたという逸話が今も残っています。

しかし，ニガヨモギ成分のツヨンに精神障害があるとの風評で，

１９１０年１０月７日，当時のスイス政府は、

住民投票を行い、アブサンの製造・販売の全面禁止を発表したのです。

しかし、９５年経た２００５年３月１日その誤審を

全面的に認め，アブサン製造・販売の公式解禁を全世界に向けて発表し，

当時大きな反響を呼びました。

このリーダーシップを執ったのがキュブラー社で、

２００５年３月のスイス国内で、

次いで２００７年１０月１６日のアメリカ国内で、

夫々解禁後最初に正式販売された

第一号アブサンとして認められています。

このキュヴェ・ドゥ・サントネールは、

スイスで禁止法が発令された１９１０年１０月７日から１００年経った

2010年10月7日を記念して、3000本だけ造られた限定解禁記念ボトルです。

正面ラベルには、 Cuvee du Centenaire 1910 – 2010

と表示され、瓶裏面には解禁逸話が仏語、独語で載っています。

解禁100年なら分かるが禁止から100年て何の記念だ？

っていう当を得たツッコミがお客様からありましたが

ともかく非常に美しいボトルです。

ちなみに中身は通常のキュブラーと同じです。

Archive Spirits Sauvage Absinthe 1804

We have been listening about the new Emile Pernot Distillerie project since last year . And finally we had a chance to try it last month . The Absinthe SAUVAGE 1804 .

"Sauvage" in French means wild or uncultivated . The name completly makes sense since Emile Pernot used the wild grown wormwood found in the mountains of Jura in France . It must had been a hard process to find , cut and collect the enough amount of wormwood located sporadic in the rocks of the mountains . Probably Dr Ordinaire (invertor of the Absinthe ) should had done the same hard work in the early days of absinthe over 200 years ago , before disttileries started to cultivated the wormwood in fields .

The recipe used was taken from a never commercialized 1804 manuscript in the Oxygenee collection .What makes the absinthe Sauvage 2 times special .

But that's not all . Sauvage absinthe had been matured for 18 months , something different since usually others absinthe are bottleled within at most one or two months of distillation .

After the bottle was open , all the floral aroma filled the place . The louche was slow and pleasent with which drop making a smoky little line towards the edge of the glass . The color was a not too heavy white greenysh like some absinthes but at the same time not too light . A wonderfull taste with the right balance of sweeteness and bitterness after taste . An extreme good absinthe .

Asmund Special Gammel Dansk

      Last year We had a post about the 26 types of herbs " Old Danish " bitter Gammel Dansk . Some may remember the Label wich says " Gammel Dansk does you good in the morning , after the day's work , when you go hunting , on a fishing trip , or as an aperitif " . Everything still doing all good all the time but even better .

      In one of our trips to Europe last month , a short stop over in Denmark was enough to meet the new product of Danish Destillers Ltd (De Danske Spritfabrikker A/S ) , actually not so new ...they have been making since 2007 , The Gammel Dansk Asmund Special .

      What is special about " Asmund Special " ? Try to think about Gammel Dansk with all those herbs plus   Canadian maple syrup, Mexican vanilla, crushed Kenyan coffee and ground West African Forastero cocoa beans . All that complex taste got more complex but with a round smooth complexity . Plus Asmund Special is matured in a 350 litre french oak cognac barrels .

BOMMERLUNDERのオールドボトルです。

おそらく80年代のもの。

現在生産されているのは38°ですが

こちらは40°

ポテトを原料とするアルコールにキャラウェイなどのハーブで

香りをつけた北欧でよく飲まれる命の水＝蒸留酒です。

冷凍庫で凍らせてストレートで飲むのが現地の飲み方。

なんとヒップホップレジェンドのFab five Freddy(ファブファイブフレディー)が

このお酒のCMソング（？）”冷たく冷やしてボマルンダー”の

オールドスクールのラップバージョンを

リリースしていたようです。
